Deodorised vs undeodorised
When a cocoa butter is formed, it carries the natural cocoa smell with it. While this can be pleasant to smell, some chocolatiers, chefs and bakers prefer their cocoa butter to have the scent removed, as it gives them more control over the flavour and scent profile of their product. This option is known as a deodorised cocoa butter. Undeodorised is the butter with the natural scent still present, which is perfect for clean-label creations and anyone that wants to retain the natural cocoa flavour.
